Curry Leaves Moringa Podi

Ingredients
- 1 Bunch or 1 Cup Fresh curry leaves (cleaned and dried)
- 1 Bunch or 1 Cup Moringa leaves (cleaned and dried)
- 3 tbsp Peanuts
- 2 tbsp Split urad dal
- 2 tbsp Chana dal
- 2 tsp Sesame Seeds
- 2 tsp Coriander Seeds
- 1 tsp Cumin Seeds
- 1/2 tsp Ajwain
- As per taste Salt
- 2 tsp Kashmiri Red Chilli Powder
- 2 tsp Amchur Powder
- 2 tsp Garlic Powder or Dried Garlic Pods
- 1/4 tsp Hing
- 1 tsp Oil
Instructions
- In a Pan take Oil and heat it. Now add Hing, Peanuts, Chana Dal, Urad Dal and roast them for 3 to 4 minutes.
- Now add Coriander Seeds, Cumin Seeds, Ajwain and Sesame Seeds and roast them for 1 to 2 minutes. Transfer everything to the pate and let them cool down.
- Now wash Curry and Moringa Leaves properly and let them dry under fan for 10-15 minutes. After 15 minutes transfer them into Oven Tray or in a Pan and let them dry until crispy. Drying In Oven:Preheat OTG at 100-degree Celsius for 10 minutes. Meanwhile spread leaves on Oven Tray in single layer. After oven is preheated, put tray inside oven and let them dry for 15 min. After 15 minutes check them and if still wet, let them sit in oven for more 10 minutes. Check by crushing leaves, once dried, let them cool down. Drying in a Pan:Heat a Pan and add leaves to the pan, and dry roast until they became crispy. Check by crushing leaves, once dried, let them cool down.
- Once everything is cooled down, put firstly spice mix into mixer grinder and grind them to coarse texture.
- Add dried curry and moringa leaves and grind them.
- Now add Salt, Kashmiri Chilli Powder, Garlic Powder or Flakes and Amchur Powder. Mix all of them well.
- Amazing Podi is READY!!
