Sweet Corn & Spinach Soup — A Wholesome Winter Comfort
When the chilly breeze sets in, nothing feels better than a warm bowl of nourishing soup. This Sweet Corn & Spinach Soup is a delightful blend of sweetness from corn and the earthy freshness of spinach — packed with fiber, antioxidants, and plant-based protein. It’s light, creamy (without cream!), and absolutely soul-soothing.
Ingredients
- 1 Katori Sweet corn kernels fresh or frozen
- 1 Katori Spinach leaves washed and chopped
- 1 small Onion finely chopped
- 2 cloves Garlic minced
- 1 Green chili optional, finely chopped
- 2½ Katori Vegetable stock or water
- according to taste Salt
- according to taste Black pepper
Instructions
Cook the corn:
- Boil or steam sweet corn until tender.
- Blend half of it into a smooth paste and keep the rest aside.
Sauté the base:
- Heat a pan, add garlic, onion, and green chili (if using).
- Sauté until translucent.
Add spinach:
- Add chopped spinach and cook for 1–2 minutes till it softens.
Mix in corn:
- Add the blended corn paste and whole corn kernels. Stir well.
Simmer:
- Pour in vegetable stock or water. Add salt and pepper.
- Let it simmer for 5–7 minutes.
Cook & Mix Well:
- Stir continuously, and cook for another 2 minutes until the soup slightly thickens.
Serve hot:
- Garnish with crushed pepper and a drizzle of olive oil or a few drops of lemon juice for a refreshing finish.
