This Sweet Corn & Spinach Soup is a delightful blend of sweetness from corn and the earthy freshness of spinach — packed with fiber, antioxidants, and plant-based protein. Ingredients
  

  • 1 Katori Sweet corn kernels fresh or frozen
  • 1 Katori Spinach leaves washed and chopped
  • 1 small Onion finely chopped
  • 2 cloves Garlic minced
  • 1 Green chili optional, finely chopped
  • Katori Vegetable stock or water
  • according to taste Salt
  • according to taste Black pepper

Instructions
 

Cook the corn:

  • Boil or steam sweet corn until tender.
  • Blend half of it into a smooth paste and keep the rest aside.

Sauté the base:

  • Heat a pan, add garlic, onion, and green chili (if using).
  • Sauté until translucent.

Add spinach:

  • Add chopped spinach and cook for 1–2 minutes till it softens.

Mix in corn:

  • Add the blended corn paste and whole corn kernels. Stir well.

Simmer:

  • Pour in vegetable stock or water. Add salt and pepper.
  • Let it simmer for 5–7 minutes.

Cook & Mix Well:

  • Stir continuously, and cook for another 2 minutes until the soup slightly thickens.

Serve hot:

  • Garnish with crushed pepper and a drizzle of olive oil or a few drops of lemon juice for a refreshing finish.
