Ingredients
  

  • 200 g paneer cubed
  • 1 cup capsicum mixed colors, sliced
  • 1 medium carrot thin sticks or slices
  • ½ cup beans chopped
  • ½ cup broccoli optional
  • 1 medium onion sliced
  • 4 –5 cloves garlic chopped
  • 1 tsp ginger grated
  • 1.5 tbsp olive oil / cold-pressed mustard oil
  • ½ tsp black pepper
  • ¼ tsp turmeric
  • ½ tsp red chilli flakes optional
  • 1 tsp oregano / mixed herbs
  • 1 tbsp lemon juice
  • Salt – to taste

Instructions
 

Lightly prep paneer

  • Heat a non-stick pan.
  • Add ½ tbsp oil.
  • Lightly sauté the paneer cubes for 2–3 minutes until slightly golden.
  • Remove and keep aside.
  • Tip: Don’t overcook paneer or it becomes rubbery.

Build flavor base

  • In the same pan, add remaining oil.
  • Add garlic + ginger → sauté until aromatic.
  • Add onions → cook until slightly soft (not brown).

Add vegetables (layer cooking)

  • Add carrots and beans first (they take longer).
  • Cook 3–4 minutes with lid on.
  • Then add capsicum and broccoli.
  • Stir-fry on medium-high heat for 4–5 minutes.
  • Keep veggies slightly crunchy for best taste and nutrients.

Season it well

  • Add:
  • Turmeric
  • Black pepper
  • Chilli flakes
  • Salt
  • Oregano / herbs
  • Mix well and sauté for 1–2 minutes.

Add paneer back

  • Add sautéed paneer cubes.
  • Toss everything gently for 2–3 minutes.

Final touch (important!)

  • Switch off flame.
  • Add lemon juice.
  • Mix lightly.
  • This gives a fresh “restaurant-style punch” without cream.
