Healthy Carrot Halwa (Gajar Ka Halwa) Recipe

India is a country with lots of variety in foods, depending on the season, demographic, culture and festivities. In winters most of our elders were enjoying lots of Halwa, Ladoo's and Raab's but presently we are getting afraid of all these winter delicacies due to fear of weight gain, various lifestyle disorders like diabetes, cholesterol, blood pressure etc. But we forget that eating these sweets actually helps in building our immunity for the next complete years. For example, Carrot Halwa (Gajar halwa) is a powerhouse of nutrients Carrots are full of Vitamin A, Antioxidants and Fibers. Milk and Ghee provides healthy fats to the body which are responsible for bones strength, Jaggery or Khand provides micronutrients along with taste and finally Nuts and Dry fruits are source of protein and helps in providing heat and energy to the body in winter season. In this blog I am sharing a Simple Yet delicious less-fat Carrot Halwa which you can prepare and enjoy.

Ingredients
  

  • 1 kg Red Carrots (finely grated)
  • 200 ml Low Fat Milk
  • 1.25 Katori Jaggery (adjust according to taste)
  • 4 tsp Pure Cow Ghee
  • 1/4 Katori Mixed Nuts & Dry fruit (Almonds, Cashews, Pista and Raisins)
  • 1 tsp Cardamom Powder
  • 1 Pinch Saffron Strands (Optional)

Instructions
 

  • Initial Preparation
    Wash and peel the carrots thoroughly
    Grate them finely using a manual grater or food processor
    Chop the nuts coarsely and set aside
  • Cooking Process
    Heat ghee in a heavy-bottomed pan
    Add grated carrots and sauté for 5-7 minutes
    Pour in the milk and mix well
    Cook on medium heat, stirring occasionally
    The mixture will start to thicken as milk reduces and carrots will be cooked till now
  • Final Stages
    Once milk is almost absorbed, add jaggery
    Continue cooking until mixture thickens
    Add cardamom powder and nuts-dry fruits
    Cook until ghee starts separating from sides

Pro Tips

For best results, use red winter carrots as they're sweeter and more flavorful

The cooking process typically takes 45-60 minutes for authentic texture

You can half the quantity of Ingredients if preparing small Batch

Storage Instructions

  • Store in an airtight container
  • Keeps well in refrigerator for up to a week
  • Can be frozen for up to a month
  • Reheat in microwave or on stovetop before serving

Quantity To Have

In spite of this Halwa to be healthy, portion size is must, check out when and how much Halwa you should consume in a day:
  • Have 1-3 tsp of Halwa everyday as a morning mid meal for a month.
  • You can have it 2 tsp after Lunch, in place of sweets you crave post Lunch.
  • If had large meals try to skip having it
  • It is perfect option for Winter Dinner where you can have 1 Katori of it.
  • Diabetic people or in other disorders have it after consulting to doctor or dietician.
  • In detox diets and therapeutic diets, you should not include this as it goes heavy on stomach.
