Ingredients
  

  • 1 Katori jowar flour sorghum flour
  • ½ Katori grated or finely chopped vegetables carrot, bottle gourd, onion, spinach, capsicum, or zucchini
  • 1 –2 green chilies finely chopped (optional)
  • 1 tbsp fresh coriander leaves chopped
  • ½ tsp cumin seeds
  • ½ tsp ajwain carom seeds
  • ½ tsp turmeric powder
  • ½ tsp red chili powder optional
  • Salt to taste
  • Warm water for kneading
  • Dry flour for rolling

Instructions
 

Mix dry ingredients

  • In a mixing bowl, add jowar flour, cumin seeds, ajwain, turmeric, red chili powder, and salt. Mix well.

Add vegetables

  • Add grated/chopped veggies and coriander leaves. Mix so the veggies combine well with the flour.

Knead the dough

  • Slowly add warm water and knead into a soft dough. Jowar flour doesn’t bind like wheat, so knead gently until the mixture holds together.

Shape the bhakri

  • Take a small portion of dough.
  • Roll it out gently on a flat surface using dry jowar flour for dusting.
  • Alternatively, flatten it by hand between two sheets of plastic or parchment.

Cook the bhakri

  • Heat a tawa (griddle) and place the rolled bhakri on it.
  • Cook on medium heat, pressing lightly with a spatula until small brown spots appear.
  • Flip and cook the other side.
  • You can puff it directly on the flame if you like, or keep it flat.

Serve hot

  • Serve your jowar veggie bhakri with curd, pickle, or dal for a wholesome, filling meal.

Notes

Tips & Variations

  • Add a spoon of sesame seeds for extra crunch and calcium.
  • Grated bottle gourd (lauki) keeps the bhakri soft and moist.
  • For kids, you can add grated beetroot or carrot to make it colorful and appealing.
  • If rolling is difficult, pat the dough directly on the hot tawa using wet fingers.
